About the role:
We’re looking for an “Early Morning Bread Mixer” to join our early morning production team. This role starts at 3:30am and sits at the heart of our process scaling, mixing, and managing doughs with consistency and care.
The role is split between two key responsibilities: mixing doughs for the day’s production, and scaling ingredients in preparation for the following day. You’ll work with a range of doughs, from classic country loaves to high-hydration mixes, porridges, cheese breads, and other specialty products.
Dough behavior changes daily with flour, temperature, and environment. You’ll monitor strength, elasticity, and fermentation, making precise adjustments to maintain consistency.
This position suits someone who is a morning person; dynamic and physically strong, thrives in structure and repetition, takes pride in detail, and understands that consistency is what makes great bread possible. You’ll be responsible for setting the foundation for the entire production cycle. Accuracy, timing, and awareness are key.
There is also opportunity to cross-train into broader production roles. For those who develop a strong command of the fundamentals, there is room to contribute to new recipe and process development.

Duties & Responsibilities
Mixing multiple dough batches (55–300kg)
Handling and transferring dough from mixer to bins
Scaling ingredients for next-day production
Cleaning and maintaining workspace
Restocking ingredients and inventory
Requirements
Reliable transportation for a 3:30am start
Minimum 1 year commercial kitchen experience
Baking or culinary education preferred
Bread, pizza, or mixing experience is an asset
Comfortable working with intensity and early hours
Able to work independently and within a team

Schedule & Availability
Part-time / Full-time (3–4 days, 20–30+ hours/week to start)
Shifts:
2-3 times start at 3:30am till 11am/2pm
2 times 7:00am (6–8+ hours) till 3pm
Weekdays + and at least one weekend
Preferred availability: Sunday & Monday strongly preferred
Must be available for early morning shifts
Compensation
$19.00–$22.00/hour (based on experience)
Additionally, team members in this role receive approximately $200-$300 per month in shared gratuities, according to our Gratuity Sharing policy
