The American bar is looking for a kitchen manager to join our new team. We are a dynamic, pub, music venue & event space on Main Street at the edge of chinatown. Our goal is to apply simplicity and freshness to classic American pub fare and making it accessible to the everyday sit down diner as well as servicing the standing & moving folks that come for concerts, events, and regular old good times.
The optimal candidate will will have a strong background in pub fare cooking & kitchen operations, a willingness to collaborate effectively towards a common goal, and an attention to detail in order to create a consistent product.
Off-line duties will consist of but are not limited to:
- training new staff
- ordering
- inventory
- upholding standards (food, cleanliness, attitude)
- nurturing a respectful positive environment where people feel supported
- working with FOH on larger groups, buyouts, parties, etc
- alerting management to any issues or maintenance
On-line duties will consist of but aren't limited to:
- proper setup maintaining and break down of stations
- operation of grills, flattops, deep fryers, and other hot and cold stations
- assembling various sandwiches, entrees, appetizers and other bar snacks
- cutting, slicing, and prepping, using manual & motorized tools
- preparing sauces, spreads, dips & other items from recipes
- portioning & scaling ingredients
- stock rotation and labeling
- daily cleaning, dishwashing, sanitizing & logging temperatures as per BC Foodsafe guidelines
