SUMMARY
Responsible for the leadership of the day to day operation of the The Lobby in Ace Hotel. Oversees and maintains a service and leadership philosophy which serves as a guide to respective staff. Works closely with Food & Beverage leadership to monitor the effectiveness of the services and products offered in the The Lobby and adjust accordingly to ensure maximum profitability. Responsible for providing lateral service to other Food and Beverage operations as needed.
CORE FOCUS & ESSENTIAL RESPONSIBILITIES
Qualified candidates must be able to satisfactorily complete the following responsibilities. Other duties may be assigned.
- Maintains and checks the cleanliness of The Lobby.
- When requested, attends Food & Beverage meetings and any other meetings regarding F&B business.
- Plays an active role in service.
- Assists in monitoring beverage costs in accordance with budgetary restrictions by adjusting pricing.
- Assist with wine selection.
- Assist with pricing recommendations.
- Maintain open lines of communication with all other departments, particularly other Food & Beverage venues.
- Maintain complete knowledge of the P.O.S. system.
- Inspect grooming standards and correct any deficiencies.
- Know menu items, preparation techniques, and service requirements for designated areas and assigned sections.
- Inspects safety hazards, correct furniture & equipment set up.
- Maintain knowledge of VIPs.
- Maintain constant communication with guests, staff, and kitchen.
- Checking to make sure that proper equipment and necessary working stock is available to staff prior to the start of their shift.
- Before each shift, participate in line up meetings with the department, informing them of the latest developments in the F&B/Wine service.
- Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
- Maintain complete knowledge of correct maintenance and use of equipment; use equipment only as intended.
- Supervise set up service, tables, and stations according to F&B standards.
- Be aware of timing for all drinks, food and any other services.
- Check on guests throughout service to ensure satisfaction.
- Support staff with their job functions.
- Complete knowledge of daily & weekly events.
- Maintain positive guest and interdepartmental relations at all times.
- Be familiar with all hotel services, features, and local attractions & activities to respond to guest inquiries accurately.
- Handle guest complaints by following SOPs and ensuring guest satisfaction.
- Monitor and maintain cleanliness, sanitation and organization of stations and service areas.
- Keep Management informed of any accidents or problems involving guests or employees.
- Perform special projects or assignments based on guest’s needs or market demands.
- Any other task written or verbal, that is assigned by management.
- Assists in maintaining control on all other expenses by watching waste.
- Assists Bar Manager or Chef in maintaining monthly inventories in relationship to revenues and business demands.
REQUIRED EDUCATION and/or EXPERIENCE
Previous Restaurant/Hotel F&B leadership experience. Smart Serve Certificate required. Candidate should have knowledge of various food service styles, wines and spirits, and proper food service safety protocol.
