THE ROLE
- The Prep/Dish Cook role at Dorinku Osaka is integral to the BOH department, playing a crucial part in culinary operations. Tasked with preparing various ingredients received from suppliers for kitchen production, this individual ensures that day-to-day tasks are completed with adherence to safe and efficient work practices as per provided specifications.
- At Dorinku Osaka, our Line Cook team prepares sushi, sashimi, yakitori, ramen and other Japanese dishes under guidance of the BOH Manager. This passionate individual takes a genuine interest in our guest experience while being able to take direction and perform tasks with speed and accuracy.

Experience and Expertise: Previous experience as a line cook is essential. Familiarity with Japanese cooking techniques and ingredients is a plus, but we're also open to candidates with a solid culinary background and a willingness to master the art of Japanese cuisine.

THE RESPONSIBILITY
- Set up and stock stations with necessary supplies and ingredients
- Adheres to brand specifications including preparation, technique and plating
- Upholds safety standards at all times
- Clean, cut, carve, season, cook, portion, label food in preparation for service (i.e., chopping vegetables, slicing fish, mixing sauces, and portioning, etc.)
- Prepares a variety of meats, seafood, poultry, vegetables, dairy and other foods using knives, electric mixers, food processors, scales, and portion bags
- Prepare food for consumption using ovens, gas stoves, fryers, griddles and broilers
- Participate in daily and periodic training/development (i.e., pre-shift meetings, one-on-ones, new menu training, team meetings, etc.)
- Participate in stock counting and food inventory, notify when low
- Maintain a welcoming and professional environment for guests and team members using respect, honesty and humility
- Performs other assigned duties (i.e., line checks, deep cleaning, periodic cleaning, routine equipment sanitization, etc.)
- Perform various food preparation tasks including cutting, carving, seasoning, cooking, portioning, and labeling using a variety of kitchen equipment
- Prepare a variety of meats, seafood, poultry, vegetables, dairy, and other foods using knives, electric mixers, food processors, scales, and portion bags
- Monitor and manage food prep levels to minimize waste and avoid stock shortages
- Ensure compliance with brand specications for ingredient preparation, technique, and storage
WHAT YOU BRING
- Previous experience working as a Line Cook or Prep Cook for 1 year; experience in Japanese cuisine considered an asset
- Adaptable and coachable attitude
- Ability to prioritize and multitask under pressure
- Great communication skills using written & spoken English; Japanese language interest and/or proficiency is welcomed
