Job Summary:
We are seeking an experienced and passionate Sous Chef to join our team at a reputable restaurant/hotel in Vancouver. The successful candidate will have a proven track record of working in a fast pace high-end restaurants or hotels and be able to assist the head chef in overseeing all aspects of the kitchen, including food preparation, menu planning, inventory control, and staff management. They must be able to lead by example and maintain the highest standards of food quality, presentation, and safety.
Duties and Responsibilities:
- Assist Executive Chef to Design and develop new menus and dishes based on customer demand and feedback
- Assist the Executive Chef in developing and executing menus, ensuring they are in line with the restaurant's vision, standards, and budget.
- Manage the kitchen staff, including scheduling, training, and supervising kitchen assistants and line cooks.
- Prepare and cook a variety of dishes using established recipes and techniques, ensuring high quality and consistency.
- Train and supervise the kitchen staff, including line cooks, prep cooks, and dishwashers, ensuring they are following established standards and procedures.
- Ensure that all food items are prepared and served according to food safety and sanitation guidelines, and that the kitchen is clean, organized, and well-stocked at all times.
- Maintain a clean and organized kitchen and ensure all kitchen equipment is in good working condition.
- Manage inventory levels and order supplies as needed to ensure efficient kitchen operations while minimizing waste and maintaining food costs. Monitor and control inventory levels of food and supplies, and order supplies as needed.
- Assist in menu planning and development, including sourcing new ingredients, testing new recipes, and creating specials.
- Lead by example in maintaining a positive work environment, fostering teamwork, and motivating the kitchen staff to achieve high levels of productivity and quality.
- Collaborate with the front-of-house staff to ensure a seamless and efficient flow of food from the kitchen to the dining room, and to address any customer concerns or feedback.
- Ensure compliance with health and safety regulations, including food safety and sanitation standards. Conduct regular kitchen inspections to ensure compliance with health and safety regulations.
- Assist the head chef with administrative tasks, such as scheduling, budgeting, and inventory management.
Qualifications and Skills:
- 3+ years of experience as a Sous Chef in a high-end restaurant or hotel.
- Diploma or degree in culinary arts or a related field is preferred.
- Food Safe Level 1 is a must.
- Strong knowledge of classical cooking techniques, ingredients, and presentation.
- Red Seal Certification is preferred
- Excellent leadership and management skills, with a proven track record of supervising and motivating kitchen staff.
- Ability to lead and manage a team in a fast-paced environment.
