Overview
The Restaurant Chef's responsibilities are to oversee the execution of menus and food production for all restaurant food. Your role is to manage the kitchen staff ensuring our standards and brand are properly represented. Implementing systems and structure for the core group of kitchen team members will be a key objective. Your responsibilities include, but are not limited to:
Operations
- Run and oversee lunch and dinner services
- Provide leadership presence in the kitchen and ensure a friendly and productive relationship with the Front of House and Sales teams
- Prepare and participate in daily service briefings regarding: specials, guest and service notes
- Develop new menu items and features in collaboration with the Executive Chef
- Prepare and cook grilled dishes such as seafood, steaks, and other menu items
- Ensure all food is cooked to the highest standards of quality and safety
- Ensure all spaces are health and safety compliant according to the guidelines set out by Toronto Public Health
- Support team members in a fast-paced environment to meet service goals
HR
- Train and develop employees to help them continuously improve their level of performance
- Provide employee manuals and set training paths in conjunction with Executive Chef
- Balance schedule by ensuring timely job posts, interviews, hires and onboarding
Finance
- Oversee kitchen production methods ensuring correct labour and food cost targets as provided by Executive Chef
- Find efficiencies in operations with cost savings and labour efficiencies in mind
Administrative
- Respond to all emails within 24 hours during regular business days, prioritizing urgent matters with a more immediate response when required
- Schedule kitchen staff with the Executive Chef
- Create and maintain a regular (daily/weekly) cleaning schedule for the kitchen facility and ensuring that all equipment is maintained correctly
Qualifications
- Ability to work efficiently under pressure
- Teamwork and communication skills
- Flexibility to work various shifts as needed
- Knowledge and experience in cooking Italian cuisine is required
- Leadership qualities for supervising junior staff are a plus
- Food handling certification is required
