Job Overview
We are seeking a highly experienced and skilled Head Shawarma Chef & Kitchen Manager. This is a leadership role for a candidate with several years of hands-on experience in shawarma, Middle Eastern, or high-volume fast-casual restaurant kitchens.
The ideal candidate must have strong experience in shawarma preparation, recipe development, kitchen systems, staff training, inventory management, and fast-paced restaurant operations. We are looking for someone who can help rebuild and elevate our food quality, create a strong and consistent menu, and lead day-to-day kitchen operations with professionalism and efficiency.
This role is ideal for a candidate who understands both the culinary and operational side of successful shawarma restaurants and can contribute to building a modern, high-quality food concept.
Responsibilities
- Lead and oversee all kitchen operations, including shawarma preparation, food quality, consistency, and workflow
- Develop and standardize recipes, sauces, marinades, platters, wraps, and other menu items
- Assist ownership in building and refining a full restaurant menu and signature items
- Train and supervise kitchen staff to maintain consistency, speed, cleanliness, and professionalism
- Ensure proper food handling, food safety, sanitation, and kitchen organization standards at all times
- Monitor inventory, food costs, prep systems, and ingredient quality
- Improve operational efficiency and kitchen workflow during busy service periods
- Ensure food presentation and quality meet high standards for dine-in and delivery platforms such as Uber Eats and DoorDash
- Collaborate with ownership on restaurant relaunch strategy, menu improvements, and long-term growth plans
- Maintain a positive, disciplined, and professional kitchen environment
Requirements & Qualifications
- Several years of experience in shawarma, Middle Eastern, or fast-casual restaurant kitchens
- Previous experience as a Kitchen Manager, Head Chef, Shawarma Specialist, or similar leadership role
- Strong knowledge of shawarma preparation, meat marination, sauces, wraps, platters, and high-volume kitchen operations
- Experience creating or improving restaurant menus and standardized recipes
- Strong leadership and staff management abilities
- Ability to work efficiently in a fast-paced environment while maintaining food quality and consistency
- Knowledge of inventory management, food costing, prep systems, and kitchen operations
- Strong understanding of food safety and sanitation regulations
- Passion for quality food, consistency, and restaurant growth
- Experience helping launch, reopen, or improve restaurant operations is considered a strong asset
Pay: $20.00-$26.00 per hour
