We're looking for an experienced pastry baker who is passionate about quality, enjoys working collaboratively, and is ready to help guide and support the pastry team. As a Pastry Lead, you'll remain hands-on in production while helping coordinate the team, guide the pastry team, and ensure every product meets the high standards our customers expect.
THE POSITION:
An enthusiastic individual to lead our Pastry Team at our Production Bakery in Mount Pleasant, Vancouver.
Full-time position, Friday to Tuesday 4:00 am – 12:00 pm. Position requires Saturday and Sunday availability.
- Lead the pastry team in producing high-quality artisan pastries from scratch, including mixing, laminating, assembling, and baking products such as croissants, scones, cookies, tarts, and seasonal specialties using industrial rack ovens.
- Bake artisan breads using a hearth oven while ensuring consistent product quality and adherence to production schedules.
- Prepare pastries and breads according to standardized recipes, production procedures, and SQF and HACCP standards.
- Coordinate day-to-day production workflow to ensure schedules and deadlines are met.
- Assist in training and providing guidance to Pastry Team Members, supporting skill development and consistent execution.
- Monitor product quality throughout production, making adjustments as needed to maintain quality standards and escalating issues to the Pastry Supervisor when required.
- Maintain high standards of sanitation, equipment care, and ingredient receiving, storage, and stock rotation (FIFO).
- Promote safe work practices and ensure compliance with Food Safe, HACCP, SQF, GMP, and WorkSafeBC requirements.
- Communicate production challenges, equipment concerns, and opportunities for process improvement to the Pastry Supervisor.
THE RIGHT FIT:
- 3+ years of professional bakery experience, with experience in pastry baking.
- Strong knowledge of pastry production techniques and food safety practices.
- Ability to lead, coach, support, and motivate others.
- Excellent communication, organizational skills and attention to detail.
- Ability to prioritize work and remain calm in a fast-paced environment.
- Flexibility to work early mornings, weekends, and holidays.
- You are physically able to stand and perform baking tasks for up to 5 hours at a time.
- You can lift 20kg to shoulder height.
- Must be able to work in varying temperature environments ranging from -18 degrees Celsius to 40 degrees Celsius.
