Responsibilities
- Prepare all aspects of food production for Apron Restaurant and Room Service and Banquets according to hotel standards and sanitation practices.
- Prepare food items using quality, predetermined methods in a timely, consistent manner while minimizing waste.
- Set up and maintain stations for restaurant and banquet service.
- Ensure consistency in food quality, presentation, and portion control according to the Chef’s expectations.
- Follow all production timelines and communicate any challenges or delays to leadership in a timely manner.
- Practice proper sanitation and safety procedures daily to ensure guest satisfaction and compliance with hotel standards.
- Maintain cleanliness and organization of walk-ins, storage areas, refrigerators, and workstations, including proper stock rotation.
- Monitor station inventory and product levels and communicate ordering needs to leadership.
- Assist with ordering, receiving, and checking deliveries to ensure product quality and accuracy.
- Support both banquet and restaurant operations as required.
- Maintain strong communication and teamwork within the kitchen.
- Demonstrate leadership and professionalism when needed.
- Report any equipment requiring repair to the Manger on Duty
- Perform additional duties as assigned by Chef(s)
Qualifications
- Red Seal Certification is considered an asset.
- Food Safe Certification is required.
- Ability to obtain and maintain all applicable provincial and federal licenses, certificates, and permits.
- Minimum three (3) years of experience in comparable 4-diamond hotels or restaurants preferred.
- Completion of a recognized culinary program.
- Ability to speak, read, write, and understand English. A second language is considered an asset.
- Must be flexible and available to work AM and PM shifts, including early mornings, weekends, and holidays.
- Must be able to work effectively in both banquet and restaurant environments.
- Strong attention to detail and commitment to consistency.
- Ability to follow direction and maintain high culinary standards under pressure.
- Strong organizational, communication, and time management skills.
- Professional appearance and grooming standards as per Wall Centre & Marriott policies.
