Job Summary
The Cook reports to the Executive Chef. The incumbent works under the First Cook and Executive Chef. This position prepares food to meet menu requirement of the day. Also ensures the safe and efficient preparation and delivery of food within legislative and fiscal constraints, and maintains records as directed.
Key Responsibilities
Operations
- Ensures that the work station is clean before beginning any food prep, and cleans the work environment on an ongoing basis to ensure food safety and hygiene standards are kept.
- Cooks to order for breakfast and/or dinner and assists in plating the meals for delivery in the dining room.
- Executes prep
- Sets up breakfast/dinner hot and cold lines.
- Cooks on the breakfast/dinner line, ensuring that all meals are cooked to recipe and to standard.
- Cooks ‘to order’ meals accurately to meet diner’s expectations.
- Ensure that grill, steam table, hot line and flat tops are correctly and hygienically cleaned for the next use.
- Ensure that all food, either raw or cooked, stay at safe temperatures
- Ensures that any supplies which are running low are noted for reorder
- Ensures that all supplies and equipment are put in their places for easy retrieval by the next user
- Reports and unsafe equipment immediately and ensures the equipment is ‘locked out/tagged out.’
- Liaisons with Public Health on a regular basis, in the absence of the Executive Chef
- Manages and ensures that effective Infection Control protocols are in place at all times and heightened when needed ie outbreak and use of disposable items
- Provide direction to servers, kitchen helpers in the absence of a manager
- Other projects and responsibilities as assigned
Qualifications
- A minimum of 3 years of experience working in food service, ideally including 2 years in a fine dining environment.
- Some experience with seniors is desired
- Ability to communicate clearly with peers and subordinates
- Ability to manage their time effectively with little supervision
- Ability to work as a team member, understanding the priorities of others
- Able to bend, stretch, sit and stand for long periods. Able to lift a maximum of 50 lbs
- Ability to work flexible hours and weekends
- Police background check
- Individual must have their Food handler certificate
- Available for call-ins
