Fuggles Beer Co is seeking an experienced, self motivated and scientifically minded Lead Cellarman/Brewer to join our production team in Richmond. In this hybrid role, you will be deeply involved in both hot side and cold side operations, ensuring our beer is brewed, fermented, and conditioned to the highest standards.
A major focus of this role will be the development and implementation of a comprehensive in-house Quality Control (QC) program. We are looking for someone passionate about the science of brewing who can take ownership of our yeast management, lab testing, and sensory analysis while keeping our cellar running efficiently.
Key Responsibilities
Quality Control & Lab Management
- Spearhead the development and execution of Fuggles Beer Co's internal QC/QA program from the ground up.
- Perform daily analytical testing, including gravity, pH, and temperature logging.
- Manage our yeast program: perform cell counts, viability/vitality testing, pitching, harvesting, and generation tracking.
- Monitor and record Dissolved Oxygen (DO) levels across cellar transfers and packaging runs.
- Organize and lead regular sensory evaluation panels to ensure brand consistency and detect off-flavours.
- Maintain meticulous digital records of all lab data, fermentation logs, and quality metrics.
Brewhouse & Cellar Operations
- Execute wort production on the brewhouse according to established recipes and SOPs.
- Manage daily cellar tasks, including dry-hopping, fruit and adjunct additions, crashing, and carbonating brite tanks.
- Perform rigorous CIP (Clean-In-Place) and SIP (Sanitize-In-Place) procedures on fermenters, brite tanks, and the brewhouse.
- Monitor fermentation profiles and adjust parameters as needed to ensure optimal attenuation and flavor profiles.
- Communicate closely with the Packaging Lead to ensure beer is ready and in spec for canning and kegging schedules.
Safety & Maintenance
- Troubleshoot minor mechanical issues with pumps, valves, and cellar equipment.
- Maintain an exceptionally clean, organized, and sanitary production environment.
- Strictly adhere to all WorkSafeBC regulations, promoting a safe culture on the production floor.
Qualifications & Requirements
Required:
- 3+ years of professional brewing and cellaring experience in a commercial brewery setting.
- Proven experience with brewery lab work, including yeast counting, microscopy, and using pH/DO meters.
- Deep understanding of fermentation science, yeast metabolism, and brewery sanitation practices.
- Ability to physically lift 23+ kg repeatedly and maneuver 73 kg kegs safely.
- Ability to stand, stoop, and crouch for long periods in a wet, cold, or hot environment.
- Highly organized with strong attention to detail and accurate record-keeping skills.
- Must be legally entitled to work in Canada.
Preferred:
- Formal brewing education (e.g., KPU Brewing Diploma, IBD, Siebel Institute, or equivalent science degree).
- Valid Stand-Up or Sit-Down Forklift Certification.
- Experience with brewery management software (e.g., Ekos, Ollie).
- Available to work weekends or late shifts.
