Set to open in Ottawa this summer, Carletto is the latest restaurant from Gray Collection, bringing the elegance and warmth of Italy to Ottawa. Inspired by traditional Italian gatherings and the simple pleasure of good food, the restaurant blends authentic cuisine with a contemporary spirit. Featuring fresh pasta, wood-fired pizzas, and carefully selected ingredients, each dish celebrates sharing and generosity.
The prep cook assists the line cook by carrying out various tasks involved in the preparation of the dishes. In particular, they set up the kitchen, prepare dishes, assemble the plates and see to the maintenance of the cleanliness of the workspaces. The main responsibilities include but are not limited to:
RESPONSIBILITIES
- Follow recipes, technical sheets, and kitchen procedures consistently
- Assist in the preparation, cutting, and portioning of ingredients for service
- Prepare and assemble dishes according to presentation and quality standards
- Ensure the quality, freshness, and proper handling of all ingredients used
- Maintain clean, organized, and properly stocked workstations at all times
- Ensure proper storage, labeling, and rotation of food products (FIFO)
- Support line cooks and kitchen team during service as needed
- Assist with inventory counts and stock control at the end of service
- Minimize food waste and follow portion control guidelines
- Maintain cleanliness of kitchen and food preparation areas in compliance with sanitation standards
- Use kitchen equipment safely and according to training
- Work collaboratively with kitchen staff to ensure efficient operations
QUALIFICATIONS
- Formal culinary training (1- or 2-year college or culinary school program, work skills program) OR on the job experience at restaurants with comparable culinary operations
- Strong interest in teamwork
- Thoroughness
- Ability to work under pressure
- Good sense of organization
- Good communication skills, in French and English, both orally and in writing
- Flexible schedule with availability on evenings, weekends and holidays
- Valid work permit required
- Experience in an Italian restaurant or similar upscale environment is an asset
