What You’ll Do

Set up and stock the sushi station with all necessary ingredients and supplies
- Prepare sushi items, including maki, nigiri, sashimi, rolls, sauces and garnishes according to recipes and presentation standards
- Complete daily mise en place and ensure the station is fully prepared for service
- Prepare and portion fish, vegetables, rice and other ingredients with care and consistency
- Maintain quality, freshness and proper food handling at all times
- Work closely with front-of-house and kitchen teams to ensure timely preparation and to accommodate special requests and food allergies
- Follow all sanitation, hygiene and workplace safety standards
- Assist with stocking, inventory and notifying management of low supplies
- Keep the work area clean, organized and sanitized throughout the shift and at closing
- Follow the direction of the Executive Chef, Sous Chef or Kitchen Manager and maintain a positive, professional attitude with coworkers and guests
What You’ll Need

Previous experience as a Sushi Cook or in an Asian/Japanese restaurant environment

Strong knowledge of sushi preparation, including maki, nigiri, sashimi, cutting techniques, and rolling methods

Ability to work efficiently, accurately, and calmly in a fast-paced environment

Strong attention to detail, cleanliness, and food presentation

Flexibility to work various shifts, including evenings, weekends, and holidays

Must be legally eligible to work in Canada, including Ontario

Culinary school certification is an asset
