2+ years of experience as a Pizza Maker in a professional kitchen

Strong experience working with high-hydration doughs and naturally fermented pizza dough

Thorough understanding of dough fermentation, proofing, dough ball management, and dough handling techniques

Experience stretching and shaping pizzas while maintaining proper structure and hydration characteristics

Understanding that this style of pizza requires controlled, longer bake times rather than a traditional 90-second Neapolitan bake

Ability to manage oven temperatures, baking schedules, and timers to ensure consistent results

Knowledge of moisture management, crust development, and achieving proper water evaporation during the baking process
